I've searched through the forum topics and your answers to these questions don't seem to apply in my situation.

I paid for a rebranding subscription, but do not have the option in the 'general' tab within the template manager to turn off or rebrand.

Also, this template appears to have a right sidebar option, mirroring what is offered for the left sidebar option, but in my template, this does appear. The only right sidebar option I have is two right sidebars.

We had to move the copyright position with the new template layouts

For this template and I think going forward its at the bottom of the layout tab

Regarding the layout have you tried the default two column layout?

I did try that layout, but really don't like the equal width given to the main content and sidebar. What I'd love best is just to have a right sidebar of the same width as the left one. Is this possible?

You can drag the layout width as required via the responsive layout options
