I am going to try to make a website using the Xero Template...
I was wondering if there is a tutorial anywhere about how to add a Zen Menu.
I can not seem to find one in your documentation.

document section - it is a work in progress at the moment

Documentation wise you should have enough to work with - if you need more then we can look to see what is missing for you

If you change the banner background colour in the theme settings of the template does that work for you?
