How can I specify what text in an article is to be displayed on the ZenGrid? If I want something other than the first xx characters.

Is there a tag I can wrap around the 'Intro Text' at the top of the article?
<intro> this is my intro text</intro>

Not a 100% sure what you are referring to with zengrid
Are you loading content via zentools?

With intro text you would use a readmore to divide up the content - beween intro text and the main article,the zentools module then uses the content combined with any setting character limit

Is there a way to hide that text from the article. (If I want the text on the zengrid to be different than what is at the top of the article).

You can hide joomla intro text from the article if you set the the global or category options
