On the demo version of Newstream2 you can see 1 item from every category, when I change Content Source to K2 it will show all the items from just 2 categories. how can I change this to show just 1 item from every K2 category?

Using the Quickstart, it is module Categories under Layout you can select Joomla Categories or K2 both use All Categories but the Joomla version shows 1 item from every category and K2 shows all items from just 2 categories.
The Zentools version is 1.13.7.

The 2 screendumps are showing what I see.

You are wanting to load the k2 category page - to do that with zentools v1 you would need to use directory content source and use the external links behaviour and add the urls for the category page

Also naming the files using prefixes and following a standardised naming of the files e.g. using the same separator in the file name

You could also try with the zentools2 k2 category source
