A prospective client has seen a site that looks pretty much similar to this and I wondered if it was possible to adapt a JB template and extension to kinda look like this?

Of course it is possible. It's not easy, but it is possible.

If I was doing it, I would just use the ZGF Zen Default template as the starting point.
