I´m using the Newlifestyle & Colourshift template, I need my site to be responsive and also has the ability to zoom in and zoom out text, links, pics etc., is there a way I can have this feature in these templates?

That really depends on the template you use. Some templates don't have this file.

For newlifestyle its \templates\newlifestyle\tpls\blocks\head.php

That works perfect (zoom in & zoom out) but it doesn't fit on the screen. I have tried on my phone & ipad.

What doesn't fit on the screen?

The template. It doesn´t reasizes when viewed on mobiles and ipads, and the main menu is not displaying.

No, it´s just for newlifestyle template, colourshift works good.
